The UDIG 1.0.1 release is available here:

• Mac OS/X: udig-1.0.1.macosx.carbon.ppc.zip

The Windows installer (and the linux zip) listed above include a Java Runtime Environment and are ready to go. The OS/X version requires Java 5 and OS/X 10.4.2 (Tiger) or better.
